Yet it does not flaunt the peat; rather it gives way to the natural sweetness of the malt to produce a whisky of perfect balance. A burst of intense smoky fruit escapes into the atmosphere - peat infused with zesty lemon and lime, wrapped in waxy dark chocolate. Bold menthol and black pepper slice through the sweet smoke followed by tarry ropes and graphite. Savour the aroma of smoked fish and crispy bacon alongside green bell peppers, baked pineapple and pear juice. Add water and an oceanic minerality brings a breath of cool, briny seaspray. Our 15-year-old Black River Casks is a tribute to the Black River that is integral to Jamaica's rum history and the source of the limestone-filtered water used to craft our rums. This blend of rare and hand-selected pot and column still rums are crafted with Jamaican limestone-filtered water, with no added flavours, and have all been aged for a minimum of 15 years in the tropical climate of Jamaica. It has a coppery hue appearance with a honey gold ring of age. This full-bodied rum reveals aromas of toasted almond and delicate hazelnut followed by notes of intense orange peel, rich vanilla and subtle hints of medium roasted coffee and molasses.
